Cream of Spinach Soup

Ingredients

• 1 package frozen spinach, thawed and drained
• 2 Tbsp. butter or margarine
• ½ onion, chopped fine
• 1 clove garlic, minced
• 2 Tbsp. flour
• 4 cups milk or soy milk
• 1 Tbsp. chicken soup powder
• Grating of nutmeg
• Grated parmesan cheese or cubed Bulgarian cheese
• Salt and pepper

Preparation

1. Make sure the spinach is thawed and drained of all water and set aside.
2. In a saucepan melt the butter or margarine, add the grated onion and garlic and sauté until golden brown.
3. Add the flour and mix until blended.
4. Stir in milk gradually, and season with salt, pepper and nutmeg.
5. Add the spinach and simmer for 3 minutes.
6. Serve sprinkled with grated parmesan cheese or cubed Bulgarian cheese
