Peel cucumbers and slice
very thin. Place slices in bowl and sprinkle with salt. Allow to
stand for 30 minutes or longer. Squeeze water out of cucumber slices
and put in a bowl.
Slice onion into thin rings
and put in bowl with cucumbers.
Add remaining ingredients, mix well,
and refrigerate several hours before serving.
Variation:
Substitute juice
of 2 lemons for vinegar, and omit water. Additional salt may be
required.
This salad can last in the
refrigerator for at least a week.
